If you’ve seen those “This is cake” videos online, there is literally no limit to the creativity a skilled baker can put into making the beloved dessert. Everyday objects, like shoes and non-cake food items like vegetables and hamburgers, are re-created in painstaking, hyperreal detail using fondant; when cut in the middle, it reveals … cake.
Closer to home, the Bake Shop at Red Rock Resort has been confecting beautiful, delectable desserts—from cupcakes to macarons and petit fours—since it opened. All are made by a team of talented bakers who make everything from scratch in-house, from the fillings to the mousse to the ganache and every layer in between.
The Bake Shop recently launched an online ordering system for custom-made cakes, allowing customers to work closely with the bakers to realize their visions in sugar. “People like to get ideas from Pinterest or Instagram,” assistant executive pastry chef Gerard Fabiani says. “They send a picture, and they’re like, ‘Could you duplicate that?’ We are very much into trendy cakes.” Some of the more popular requests include unicorn and princess cakes for kids’ birthdays and occasion-themed cakes like Halloween. Fabiani says his team can take on any request, including this recent creation: a lifesize golf bag cake some 3 feet tall. “It’s great, because we can display the talent of [the bakers],” he says.
Fabiani says it takes about 48 hours to make a custom cake; more if it’s a complex design. And with the holidays coming up, the baking team is looking forward to flexing its creativity. “We welcome the walk-in order, of course, but if people are planning a party, we would love to have them give us notice. But we can arrange a last-minute order. We understand the rush when it comes to organizing a party, so we are not turning down anybody,” Fabiani says.
