Tom Colicchio taps chef Anthony Zappola for Heritage Steak at the Mirage

Don’t know chef Anthony Zappola? Don’t worry, you will.

Zappola has been tapped by Tom Colicchio to run the show as executive chef of his new Mirage restaurant, Tom Colicchio’s Heritage Steak, slated to open this month.

Zappola already knows his way around a cow. The Cleveland-native chef spent eight years working for Colicchio and Craft restaurants in New York and LA, before moving on to the Langham Hotel in Pasadena, California, where he helmed the re-calibrated Royce Wood-Fired Steakhouse, known for high-quality meat cooked on an “Aztec wood-fired grill.”

Although the Royce just reopened last spring, Zappola is on the move again, this time to Vegas, where he’ll continue his good meat, good flame approach at Heritage Steak. The 220-seat restaurant will focus on “antibiotic-free animals raised by purveyors committed to time-honored farming practices and heritage breeds.” Cuts will be cooked over open flame of the wood and charcoal variety, and the “glow of the hearth” will be infused in the restaurant’s design.
